Orange and Yoghurt Cake

Ingredients

  • For the cake:
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup yoghurt
  • 1/2 cup oil (I use canola oil but use anything you like, or melted butter)
  • Zest of 4 oranges
  • 2 cups self-raising flour (or you can use 2 cups regular flour and 2 tsp baking powder)
  • A pinch of salt
  • For optional yoghurt cream:
  • ½ cup cream
  • 2 Tbsp yoghurt
  • Vanilla paste, optional

Instructions

  1. Whisk together sugar, eggs, yoghurt, oil and orange zest until combined. Add the flour and salt and stir until just combined.
  2. Pour into a greased and lined cake pan (you can use a loaf pan or a 21cm cake pan or ring tin) and bake at 170 degrees Celsius for 35-45 minutes.
  3. Meanwhile make the syrup by heating the orange juice and sugar and the sugar has dissolved.
  4. When the cake come out of the oven, poke lots of holes with a skewer and pour over the syrup. Let sit for at least 10 minutes before unmolding.
  5. For the yoghurt cream, put all the ingredients in a small bowl and whip together. Serve with the cake.
