Orange and Yoghurt Cake

Ingredients
- For the cake:
- 3/4 cup sugar
- 2 eggs
- 1 cup yoghurt
- 1/2 cup oil (I use canola oil but use anything you like, or melted butter)
- Zest of 4 oranges
- 2 cups self-raising flour (or you can use 2 cups regular flour and 2 tsp baking powder)
- A pinch of salt
- For optional yoghurt cream:
- ½ cup cream
- 2 Tbsp yoghurt
- Vanilla paste, optional
Instructions
- Whisk together sugar, eggs, yoghurt, oil and orange zest until combined. Add the flour and salt and stir until just combined.
- Pour into a greased and lined cake pan (you can use a loaf pan or a 21cm cake pan or ring tin) and bake at 170 degrees Celsius for 35-45 minutes.
- Meanwhile make the syrup by heating the orange juice and sugar and the sugar has dissolved.
- When the cake come out of the oven, poke lots of holes with a skewer and pour over the syrup. Let sit for at least 10 minutes before unmolding.
- For the yoghurt cream, put all the ingredients in a small bowl and whip together. Serve with the cake.
