Easy Eats: Spiced Fish Tacos with Caper and Dill Mayo

These are non-traditional taco flavours but it all works together brilliantly.

Ingredients

  • 1/2 cup good quality mayonnaise
  • 2 Tbsp capers
  • 1/2 tsp dried dill
  • 2 tsp lemon juice
  • Sea salt and cracked black pepper, to taste
  • 1/2 cup cornflour
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 500g firm white fish
  • Oil or ghee for frying
  • 8 soft corn or flour tortillas
  • Finely shredded cabbage
  • 1 avocado, stoned and thinly sliced
  • 2 radishes, sliced thinly
  • A handful of fresh coriander leaves, roughly chopped

Instructions

  1. Combine the mayonnaise, capers, dill and lemon juice in a small bowl and stir well. Season generously with salt and pepper. Place in fridge until ready to use.
  2. Combine the cornflour, spices and salt in a large bowl.Cut the fish into bite-sized pieces and toss together with the flour.
  3. Heat 1cm of oil in a sauté pan over a medium-high heat. Cook the fish in two batches (to avoid overcrowding the pan) until golden and crunchy. A minute or so on each on each side should be plenty.
  4. Heat the tortillas. Top each with some shredded cabbage, avocado and some radish slices. Place a few pieces of fish on each and drizzle with the caper mayonnaise.
